Ingredients
  

  • 2 cups cooked chicken diced or shredded
  • ½ cup mayonnaise
  • 1 tablespoon curry powder
  • 1 tablespoon honey
  • ¼ cup raisins
  • ¼ cup chopped celery
  • ¼ cup chopped red onion
  • Salt and pepper to taste
  • Chopped nuts such as almonds or cashews, for garnish (Optional)
  • Lettuce leaves or bread for serving Optional

Instructions
 

  • In a mixing bowl, combine the mayonnaise, curry powder, and honey. Stir until well combined.
  • Add the diced or shredded chicken to the bowl with the curry mayonnaise mixture. Mix until the chicken is evenly coated.
  • Fold in the raisins, chopped celery, and chopped red onion into the chicken mixture.
  • Season the salad with salt and pepper to taste, adjusting according to your preference.
  • If desired, garnish the curry chicken salad with chopped nuts, such as almonds or cashews.
  • Serve the curry chicken salad on a bed of lettuce leaves or as a sandwich filling between slices of bread.
