Instructions
Prepare The Steak
Start by pounding the boneless sirloin steak to about ¼ inch thickness using a meat mallet. This helps tenderize the meat and ensures even cooking.
Mix 1 1/2 cups of flour, 1 tsp garlic powder, 1/2 tsp salt, 1 tsp pepper, and 1/4 tsp cayenne pepper in a shallow bowl. This will be your coating mixture.
In another bowl, whisk together 1 cup of buttermilk and 2 large eggs until well combined. This will be your wet mixture.
Dip the pounded steak into the wet mixture, allowing any excess to drip off, and then coat it evenly with the flour mixture. Press the flour mixture onto the steak to ensure it sticks.
Repeat the dipping and coating process for a thicker and crispier crust. Let the coated steak rest for a few minutes.
Fry The Steak
Heat vegetable oil in a deep skillet or frying pan over medium-high heat. The oil should be hot but not smoking, about 350-375°F (175-190°C).
Carefully place the coated steak into the hot oil. Fry for about 4-5 minutes per side or until the steak is golden brown and crispy. Ensure the internal temperature reaches 160°F (71°C) for food safety.
Once cooked, remove the steak from the oil and place it on a paper towel-lined plate to drain any excess oil.
Prepare The Gravy
In a separate saucepan, melt 1/2 cup of salted butter over medium heat.
Stir in 1/4 cup of flour to create a roux. Cook the roux, stirring constantly, until it turns golden brown.
Gradually whisk in 2 cups of milk, 1/2 tsp salt, and 1/2 tsp pepper. Continue to cook and stir until the gravy thickens and is smooth, usually taking 5-7 minutes.
Serve
Slice the chicken-fried steak into strips or pieces.
Pour the creamy gravy over the steak or serve it on the side as a dipping sauce.
