  • Preheat Your Oven: Begin by preheating your oven to 425°F (220°C). This step ensures that your chicken and potatoes cook evenly and develop that golden crispiness.
  • Prepare The Marinade: Combine the lemon zest, lemon juice, minced garlic, olive oil, dried oregano, dried thyme, salt, and pepper in a mixing bowl. Mix everything until it forms a fragrant marinade.
  • Marinate The Chicken: Place the chicken thighs in the marinade and coat them thoroughly. This will infuse the chicken with the bright and zesty flavors of the Mediterranean. Let them sit for at least 15 minutes to absorb all the goodness.
