Ingredients
  

  • 2 cups cooked chicken shredded or cubed
  • ½ cup Ocean Spray Craisins dried cranberries
  • ¼ cup celery finely chopped
  • ¼ cup red onion finely chopped
  • ¼ cup walnuts chopped (optional)
  • ½ cup mayonnaise
  • 2 tablespoons sour cream optional for creaminess
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Mixed salad greens for serving
  • Whole grain bread or croissants for serving, optional

Instructions
 

  • Prepare the Chicken: If you haven’t already, cook the chicken. You can boil, grill, or bake chicken breasts seasoned with a bit of salt and pepper. Once cooked, let them cool before shredding or cutting into small cubes.
  • Mix the Salad: In a large bowl, combine the shredded chicken, Ocean Spray Craisins, chopped celery, red onion, and walnuts (if using). Toss these ingredients together until well mixed.
  • Dress the Salad: In a small bowl, whisk together the mayonnaise, sour cream (if using), and lemon juice until smooth. Add salt and pepper to taste.
  • Combine: Pour the dressing over the chicken mixture and stir until everything is evenly coated. Adjust the seasoning with more salt and pepper if needed.
  • Chill: For the best flavor, cover and refrigerate the salad for at least an hour. This allows the flavors to meld together beautifully.
