Ingredients
  

  • 2 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 cup diced apples
  • 1 cup dried cranberries
  • ½ cup chopped pecans
  • ½ cup crumbled feta cheese
  • ¼ cup thinly sliced red onion
  • Salt and pepper to taste
  • Balsamic vinaigrette dressing store-bought or homemade

Instructions
 

  • Prepare the Chicken: Preheat your oven to 375°F (190°C). Place the chicken breasts on a baking sheet lined with parchment paper. Drizzle olive oil over the chicken breasts and season with salt and pepper. Bake in the preheated oven for about 20 minutes or until the chicken is cooked through and no longer pink in the center. Once cooked, remove the chicken from the oven and let it cool for a few minutes. Then, slice it into bite-sized pieces.
  • Assemble the Salad: In a large salad bowl, combine the diced apples, dried cranberries, chopped pecans, crumbled feta cheese, and thinly sliced red onion. Add the sliced chicken on top of the salad ingredients.
  • Dress the Salad: Drizzle balsamic vinaigrette dressing over the salad according to your preference. Start with a few tablespoons and adjust to taste. Toss the salad gently to evenly distribute the dressing and ingredients.
