Ingredients
  

  • 2 cups cooked chicken breast diced
  • 1 cup honey baked ham diced
  • ½ cup mayonnaise
  • ¼ cup Greek yogurt optional for a lighter version
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • ¼ cup celery finely chopped
  • ¼ cup red onion finely chopped
  • Salt and pepper to taste
  • Lettuce leaves for serving
  • Sliced tomatoes for serving (optional)
  • Sliced cucumbers for serving (optional)

Instructions
 

  • Prepare Chicken and Ham: Cook chicken breasts by boiling, baking, or grilling until fully cooked. Allow to cool, then dice into small pieces. Similarly, dice the honey baked ham into small cubes.
  • Mix Dressing: In a medium-sized mixing bowl, combine mayonnaise, Greek yogurt (if using), Dijon mustard, and honey. Mix until well combined.
  • Combine Ingredients: Add the diced chicken breast, diced honey baked ham, chopped celery, and chopped red onion to the bowl with the dressing.
  • Season: Season the mixture with salt and pepper according to your taste preference.
  • Mix Well: Gently toss all the ingredients together until evenly coated with the dressing.
  • Chill (Optional): If time allows, refrigerate the chicken salad for about 30 minutes to allow the flavors to meld together.
