Salt and pepper to taste

mayonnaise

Instructions
Cook the Chicken
Preheat your oven to 375°F (190°C).
Rub the chicken breasts with olive oil and season with salt and pepper.
Place the chicken breasts on a baking sheet lined with parchment paper.
Bake in the preheated oven for 20-25 minutes or until the chicken is cooked through and no longer pink in the center.
Once cooked, let the chicken cool slightly, then chop it into bite-sized pieces.
Prepare the Dressing
In a small bowl, whisk together the mayonnaise, Dijon mustard, and lemon juice until well combined. Set aside.
Assemble the Salad
In a large mixing bowl, combine the chopped chicken, celery, red onion, bell pepper, cucumber, and parsley.
Pour the prepared dressing over the chicken and vegetable mixture.
Gently toss everything together until the chicken and vegetables are evenly coated with the dressing.
Serve
To serve, line serving plates with lettuce leaves.
Spoon the chicken salad onto the lettuce leaves.
Garnish with additional parsley if desired.
