This recipe is perfect for those looking for a light and satisfying meal without compromising on flavor.

Ingredients
  

  • 2 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • ½ cup mayonnaise gluten-free
  • 1 tablespoon Dijon mustard gluten-free
  • 1 tablespoon lemon juice
  • ¼ cup chopped celery
  • ¼ cup chopped red onion
  • ¼ cup chopped bell pepper any color
  • ¼ cup chopped cucumber
  • 2 tablespoons chopped fresh parsley
  • Lettuce leaves for serving

Instructions
 

Cook the Chicken

  • Preheat your oven to 375°F (190°C).
  • Rub the chicken breasts with olive oil and season with salt and pepper.
  • Place the chicken breasts on a baking sheet lined with parchment paper.
  • Bake in the preheated oven for 20-25 minutes or until the chicken is cooked through and no longer pink in the center.
  • Once cooked, let the chicken cool slightly, then chop it into bite-sized pieces.

Prepare the Dressing

  • In a small bowl, whisk together the mayonnaise, Dijon mustard, and lemon juice until well combined. Set aside.

Assemble the Salad

  • In a large mixing bowl, combine the chopped chicken, celery, red onion, bell pepper, cucumber, and parsley.
  • Pour the prepared dressing over the chicken and vegetable mixture.
  • Gently toss everything together until the chicken and vegetables are evenly coated with the dressing.

Serve

  • To serve, line serving plates with lettuce leaves.
  • Spoon the chicken salad onto the lettuce leaves.
  • Garnish with additional parsley if desired.
  • Serve immediately and enjoy your gluten-free chicken salad!
