Ingredients

  • 2 cups cooked shredded chicken breast
  • 2 cups chopped romaine lettuce
  • 1 cup cherry tomatoes halved
  • 4 slices turkey bacon cooked and crumbled
  • 1 ripe avocado diced
  • ½ cup diced cucumbers optional

For the Dressing:

  • 3 tablespoons plain Greek yogurt
  • 2 tablespoons mayonnaise or light mayo for fewer calories
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions
 

Prepare the Ingredients:

  • Cook the turkey bacon in a skillet over medium heat until crispy, then crumble it into pieces. Dice the avocado, cucumbers, and tomatoes. Shred the cooked chicken breast.

Make the Dressing:

  • In a small bowl, whisk together Greek yogurt, mayonnaise, lemon juice, Dijon mustard, salt, and pepper. Adjust seasonings to taste.

Assemble the Salad:

  • In a large salad bowl, combine the lettuce, chicken, tomatoes, turkey bacon, avocado, and cucumbers.

Toss and Serve:

  • Drizzle the dressing over the salad and toss gently until well coated. Serve immediately for the freshest flavor.

Notes

Always adjust the seasoning of the dressing based on your preference. Fresh lemon juice enhances flavor but can be substituted with apple cider vinegar.
