Ingredients
  

  • 2 cups cooked chicken shredded or diced
  • ½ cup celery finely chopped
  • ¼ cup red onion minced
  • ½ cup mayonnaise or Greek yogurt for a healthier option
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • Lettuce leaves for serving
  • Grapes nuts, or apples for extra crunch and sweetness (optional add-ins)

Instructions
 

  • Prepare The Chicken: If you’re using leftover chicken, shred or dice it into bite-sized pieces. For fresh chicken breasts, season them with salt and pepper and cook in a skillet over medium heat until fully cooked. Allow it to cool, then chop it into small pieces.
  • Mix The Ingredients: In a large mixing bowl, combine the shredded chicken, chopped celery, and minced red onion.
  • Make The Dressing: In a separate bowl, whisk together mayonnaise (or Greek yogurt), Dijon mustard, lemon juice, and garlic powder. Season with salt and pepper to taste.
  • Combine And Chill: Pour the dressing over the chicken mixture and stir until well combined. Cover and refrigerate for at least an hour to allow the flavors to meld together.
