Ingredients
  

For The Salad

  • 2 boneless skinless chicken breasts
  • 4 cups mixed greens e.g., lettuce, spinach, or arugula
  • 1 cup red bell pepper thinly sliced
  • 1 cup cucumber julienned
  • 1 cup carrots shredded
  • ½ cup red cabbage thinly sliced
  • ¼ cup green onions chopped
  • ¼ cup cilantro leaves chopped
  • ¼ cup roasted peanuts chopped (optional)

For The Dressing

  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 teaspoon fresh ginger minced
  • 1 clove garlic minced
  • ½ teaspoon red pepper flakes adjust to taste

Instructions
 

  • Prepare The Chicken: Season the chicken breasts with salt and pepper. Heat a skillet or grill pan over medium-high heat and cook the chicken for about 6-7 minutes per side until fully cooked. Let the chicken rest for a few minutes, then slice it into thin strips.
  • Prepare The Salad: Combine the mixed greens, red bell pepper, cucumber, carrots, red cabbage, green onions, and cilantro in a large salad bowl. Add the sliced chicken on top.
  • Make The Dressing: In a small bowl, whisk together the soy sauce, rice vinegar, honey, sesame oil, minced ginger, minced garlic, and red pepper flakes until well combined.
  • Toss And Serve: Drizzle the dressing over the salad and gently toss to combine. If desired, sprinkle roasted peanuts on top for added crunch and flavor.
