Ingredients
  

  • 2 cups cooked chicken breast shredded (For convenience, you can use rotisserie chicken)
  • ½ cup buffalo sauce adjust based on your preference for spiciness
  • ¼ cup ranch dressing
  • ¼ cup Greek yogurt for a healthier, creamy texture
  • ½ cup celery finely chopped
  • ¼ cup red onion finely chopped
  • ¼ cup carrot shredded
  • Salt and pepper to taste
  • ¼ cup blue cheese crumbles Optional
  • 2 tablespoons fresh parsley chopped (Optional)
  • Lettuce leaves croissants, or your choice of bread for serving

Instructions
 

  • If you haven’t already, cook the chicken breast by boiling or baking until fully cooked, then shred it using two forks. If using rotisserie chicken, shred it into bite-sized pieces.; In a large bowl, combine the buffalo sauce, ranch dressing, and Greek yogurt. Whisk them together until you get a smooth and uniform sauce.; Add the shredded chicken, chopped celery, red onion, carrot, and optional blue cheese crumbles to the bowl with the sauce. Season with salt and pepper to taste. Mix well until all the chicken is coated with the buffalo sauce mixture.; For the best flavor, cover and refrigerate the chicken salad for at least an hour to allow the flavors to meld. However, if you’re pressed for time, you can serve it right away.; Serve the buffalo chicken salad on a bed of lettuce, in a croissant, or on your choice of bread.
