Ingredients
  

  • 6 chicken breasts
  • 2 tablespoons green seasoning
  • 2 blades scallion

  • 1 large Irish potatoes About 1lb, cut into small cubes
  • 1 sweet potato cubed
  • 1 christophene peeled and sliced into pieces
  • 1 pack of chicken noodle soup
  • 2 teaspoons salt
  • ½ teaspoon black pepper
  • 2 bay leaf
  • 2 sprigs thyme
  • 1 scotch bonnet pepper
  • 8 cups of water plus 2 additional

For Dumplings

  • 1 cup flour
  • cup water
  • ¼ teaspoon salt

Garnish (Optional)

  • Lime
  • Fresh cilantro

Instructions
 

  • Marinate The Chicken: Begin by marinating the chicken breasts with green seasoning. Allow them to soak up those Caribbean flavors for at least 30 minutes.
  • Prepare The Dumplings: While the chicken marinates, mix the flour, water, and salt in a bowl to form a dough. Shape small portions into dumplings and set aside.
  • Start The Soup Base: In a large pot over medium heat, add the marinated chicken breasts and brown them on each side. This step builds a rich foundation for the soup.
  • Vegetable Symphony: Add scallion, diced pumpkin, corn, carrots, celery, Irish potato, sweet potato, and christophene to the pot. Stir in the chicken noodle soup mix for an extra burst of flavour.
  • Season To Perfection: Season with salt, black pepper, thyme, bay leaves, and scotch bonnet peppers. Pour in 8 cups of water, allowing the ingredients to simmer together.
  • Bring To A Boil: Bring the soup to a boil and then reduce the heat to a simmer. Let it gently cook for about 30-40 minutes until the chicken is tender and the vegetables are cooked through.
  • Add Dumplings: In a separate pot, bring 2 cups of water to a boil. Drop in the dumplings and cook until they float to the surface. Transfer them into the soup pot.
