Ingredients
  

  • 2 bone-in skin-on chicken breasts
  • 2 teaspoons olive oil
  • 2 teaspoons chicken rub seasoning
  • ¼ cup chopped pecans
  • 1 celery rib very finely minced
  • ½ large scallion very finely minced
  • cup mayonnaise
  • 2 ½ tablespoons honey
  • 1 ½ teaspoons white wine vinegar
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper

Instructions
 

Prepare The Chicken

  • Rub the chicken breasts with olive oil and chicken rub seasoning.
  • Roast them in the oven at 325 degrees Fahrenheit until the internal temperature reaches 160 degrees.
  • Once cooled, remove the meat from the bones, discard the skin and bones, and finely chop the meat.

Toast The Pecans

  • In a dry, nonstick skillet, toast the chopped pecans until golden and aromatic.

Assemble The Salad

  • Mix the minced chicken, toasted pecans, celery, scallion, mayonnaise, honey, vinegar, salt, and pepper in a large bowl.
  • Chill the salad for at least 30 minutes to allow the flavors to blend properly, then enjoy.
