My latest creation, which I fondly call Calvin’s Chicken Salad Recipe, is a delightful fusion of simplicity and taste that has quickly become a favorite in my household.
Crafting this recipe, I aimed for a balance of textures and flavors – the tender, juicy chicken, the crunch from fresh celery, and a tangy hint from the lemon and Dijon mustard.

Ingredients
  

  • 2 cups Chicken breast medium-sized, cooked and shredded
  • ½ cup Mayonnaise
  • ½ cup Celery finely chopped
  • ½ cup Red grapes halved
  • ¼ cup Pecans or walnuts chopped
  • 2 Green onions thinly sliced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Lemon juice
  • Salt to taste
  • Black pepper to taste
  • Lettuce leaves or mixed greens for serving
  • Fresh dill or parsley for garnish optional

Instructions
 

  • Prepare The Chicken: If your chicken is not pre-cooked, poach or grill the chicken breasts. Once cooked, allow them to cool, and then shred them into bite-sized pieces.
  • Mix The Salad: In a large bowl, combine the shredded chicken, mayonnaise, chopped celery, halved grapes, chopped nuts, and thinly sliced green onions.
  • Season: Add Dijon mustard, lemon juice, salt, and black pepper to the salad. Mix well to ensure all ingredients are evenly coated.
  • Chill: For the best flavor, cover the salad and refrigerate it for at least 1 hour. This allows the flavors to meld together.
  • Serve: Serve the chicken salad on a bed of lettuce leaves or mixed greens. Garnish with fresh dill or parsley if desired.
