Ingredients
  

  • 8 oz pasta farfalle or any preferred shape
  • 2 cups broccoli florets
  • 1 cup cherry tomatoes halved
  • ½ cup red onion thinly sliced
  • ½ cup black olives sliced
  • ¼ cup fresh parsley chopped
  • cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced
  • Salt and pepper to taste
  • Grated Parmesan cheese optional for topping

Instructions
 

  • Cook the pasta according to package instructions. Drain and set aside to cool.
  • In a large bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper to make the dressing.
  • Add the cooked pasta, broccoli florets, cherry tomatoes, red onion, black olives, and fresh parsley to the bowl with the dressing. Toss well to combine and coat everything evenly.
  • Taste and adjust seasoning if necessary.
  • Chill the salad in the refrigerator for at least an hour to allow the flavors to meld together.
  • Before serving, top with grated Parmesan cheese if desired.
